A "die-off" is not necessarily something that happens in one fell swoop. It can also be a "slow burn" that takes several centuries to play out. In the case of the latter scenario, it's not something immediately-noticeable in one lifetime beyond the general, "man, things seem to be really getting worse and worse by the year" observation.
