I'll respond to a few of these in more detail when I have a fresh brain tomorrow morning. But on that last part I have to totally agree that now is a very rough time for organizations of any type. A mutual aid society today has to compete with the welfare state, paternalistic corporate employers, generic/corporatized mega-charities and nonprofits, and an increasingly-byzantine and restrictive legal environment. Plus groups in general tend to go septic real fast if a paranoid vetting process isn't put in place from the getgo. One starting an org along these lines has to make the org all about offering something that mainstream society has totally failed at. At this point in time, I think the best thing is to keep things as informal as possible.
